Mini Spinach Uncheese Pizzas
Pizza Topping: 3 lbs. Spinach, fresh or frozen 3 Onions, medium to large size 2 cups Nutritional Yeast, flakes 3 tbsp. Lemon Juice 3 tbsp. Corn Starch Hot Pepper Sauce, to taste Whole Wheat Rolls with Sesame Seeds Or any other kind of roll - See: Breads and Rolls (To enlarge the photo of the mini spinach uncheese pizza, click on the photo or link) |
This recipe is great for leftovers and quickie meals and snacks, with only some longer preparation work on the first day when the spinach mixture and the rolls are made. This spinach uncheese pizza will serve 6 adults as a main meal (4 mini pizzas) with a salad, or it will make double the amount as a snack.
Frozen spinach is easier to use since it avoids the timely washing and cleaning of fresh spinach, and can be defrosted overnight in the refrigerator the night before the spinach topping is made, or it can be defrosted in the microwave oven while the rolls are being made.
Placing the spinach in a large covered baking dish and add peeled, washed and diced onions, cover, and place the dish in the microwave oven and cook on high heat until the onions become semi-translucent mixing occasionally to insure uniform cooking.
While the spinach is cooking, place the cornstarch in a small bowl, add the lemon juice and hot sauce and mix well to make sure the corn starch is uniformly dispersed. When the spinach and onions are cooked, mix the cornstarch mixture again, and add to the spinach with the nutritional yeast, and mix well, cover, and reheat on high for a few minutes to make sure the cornstarch thickens all the liquid in the baking dish. If there is still liquid, add additional cornstarch mixed with a little lemon juice or water, mix well, and reheat if necessary.
Slice the rolls in half and lightly toast them in toaster over or regular toaster.
Place the spinach uncheese topping on the cut half of each roll, and place in the microwave oven for about 30 seconds per half, or under the broiler in the toaster oven until the surface begins to dry as shown in the photo.
Serve with a large tossed salad, or as a snack, and enjoy.
