Baked Potato - Cajun Style
Cajun may also be spelled, Cajan

Ingredients:

Baking Potatoes, small
Cajun Seasoning, prepared

Preparation:

Bake the potatoes (see our recipe for Baked Potato).  If baked in a conventional oven, we suggest wrapping the potatoes in aluminum foil to keep the outsides soft.

When the potatoes are baked, remove from the oven and place on a plate.  Sprinkle a little water on the outsides and roll around to make sure the outsides are damp.  Cut the potatoes in half lengthwise.  Sprinkle a thorough coating of Cajun seasoning on the skin and cut surfaces and place on metal baking pan.  

Place the prepared potatoes in a toaster oven on under the broiler in a conventional oven.  Broil for about 10 minutes until the outsides are crispy.   Cajun seasoning can sometimes cause smoking, so make sure the oven is vented or under an exhaust hood.  Remove from the oven and serve.
