Black Sticky Rice Pudding with Bananas, Raisins, and Spice
Ingredients
2 cups Black Sticky Rice cooked in 4 cups Water
4 Bananas, large
10 Dates, pitted
1 cup Raisins, seedless
1 tsp. Cinnamon, ground
1 tsp. Allspice, ground
1/4 tsp. Cloves, ground
1/4 tsp. Nutmeg, ground

Preparation
Place the rice pot on the stovetop and add 4 cups of cold tap water. Turn the heat on high and allow the water to come to a boil.
When the water begins to boil, add the two cups of black sticky rice, cover the pot, reduce the heat to low, and simmer until all the water is absorbed into the rice.
While the rice is cooking, place the peeled bananas and dates in the container of a high speed blender, cover, and run the blender at high speed until the bananas and dates are creamy smooth. Turn off the blender.
When the rice is cooked, pour or spoon the rice into a two quart covered baking dish, sprinkle in the seasonings, add the raisins, and pour on the banana-date mixture. Mix thoroughly, cover, and place in the microwave oven for 10 minutes on high at 1000 watts (adjust time to the power of your microwave). Toward the end of the baking time, the sticky rice pudding may start to boil over, as shown in the photo. You can protect the microwave by placing a paper towel or microwaveable plate under the baking dish.
The black sticky rice pudding may also be baked in a conventional oven in about 20 minutes at 350 degrees F. In this case, you may want to put a baking sheet under the baking dish to catch anything that boils over.
When the black sticky rice pudding is finished baking, remove from the oven and allow to cool on a wire rack.
Serve and enjoy for breakfast, dessert, or for a snack. Leftovers can be stored in the covered baking dish in the refrigerator for 2-3 days.
