Tortilla with Black Beans and Rice – Costa Rican Style

Black Beans and Rice – Costa Rican Style

Preparation
Warm the tortillas.
Starting from one edge to about 2/3 of the way across the tortilla, spoon on the freshly prepared or warmed left-over Costa Rican black beans and rice. If desired, add some salsa on top.
Fold one side of the tortilla snugly over the filling and repeat with the other side. Next, fold up the bottom. Hold the tortilla with the open end up and the folded seam away from you.
Enjoy! Goes great with a large tossed salad.
