Multi-Bean, Chick Pea, Rice and Vegetable Soup
Ingredients:
2 cups Mixed Beans, dried
1 cup Chickpeas (Garbanzo Beans), dried
8 cups Boiling Water
1 tbsp Cilantro, dried
1 tbsp Coriander, ground
1 tbsp Cumin, ground
1 tsp Ginger, powder
1 tsp Turmeric, ground
Dash Hot Red Pepper (optional, to taste)
1 cup Brown Rice
2-4 cups Boiling Water
2 Yellow Onions, medium
size, diced
2-3 Carrots, diced
2-3 Ribs Celery, diced
1 Bell Pepper, diced
4-5 Garlic Cloves, crushed or finely diced
1-28 oz can Tomatoes, crushed

Preparation:
On the night before you intend to eat the soup, set your covered slow cooker on �high.� Add eight cups boiling water, the mixed beans, and the chickpeas. (We heat the water in our microwave oven, two cups at a time, while sorting out any unwanted material from the beans and chickpeas. We then use a sieve to rinse the beans and chickpeas under running water before adding to the slow cooker.)
Before retiring for the night, stir and check the water depth again. Then turn the setting of the covered slow cooker to �low.�
In the morning, turn setting of cooker to �high.� Stir, and add the cilantro, coriander, cumin, ginger, turmeric, and hot pepper. Add more hot water, if needed to just cover beans and chickpeas in the slow cooker.
Add the brown rice and two additional cups of boiling water. Stir well and cook until the rice begins to soften.
Clean and dice the onions, carrots, celery, and Bell pepper. Add these vegetables to a microwaveable dish with lid. Add crushed or diced garlic. Heat in microwave oven until they are tender, and add them to the slow cooker. Stir to mix vegetables with beans, chickpeas, and rice. Empty can of tomatoes into the microwaveable dish, cover, and heat in the microwave oven. Add to soup mixture and stir. Add another dash of hot pepper sauce, if desired.
When all the ingredients are soft, the soup is ready to serve.

(Note: This soup, like the others we make in quantity, improves in flavor when stored in the refrigerator and reheated on two or three subsequent days.)
