Vegetable Stock or Broth

Ingredients:

1 Onion, medium sized
1 Stalk Celery, large
1 Carrot, large
1 Clove Garlic, large
Parsley, few sprigs
1 or 2 Cups Water

Preparation:

Wash and peel Onion, Carrot, and Garlic Clove. Wash Celery Stalk and Parsley.

Put all the ingredients, including water, into the container of a high-speed blender. Puree at high speed. Then add water, as needed, to bring the total volume to 4 cups.

To make vegetable stock, heat to boiling and then simmer.

Or

This vegetable stock may be made in a more concentrated form in the blender and added directly to any recipe calling for vegetable stock or broth, such as a soup or stew. Adjust water amount used to the specific recipe.

The above recipe is in keeping with God's creation intent (Genesis 1:29-31):  'Then God said, "I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food.  And to all the beasts of the earth and all the birds of the air and all the creatures that move on the ground-- everything that has the breath of life in it-- I give every green plant for food." And it was so.   God saw all that he had made, and it was very good.' (NIV)  Let no animal suffer or die that we may live!
