(Dulse, Granules) This is a greatly enlarged photo of the dulse granules from
Maine Coast, but they look more like flakes. We use these granules or flakes in
salads and to impart a seafood flavor to our vegan recipes. Dulse is a deep red
or purple algae sea vegetable. The blades or branches of dulse are flattened and
broad with numerous side branches. Lobed segments of dulse make the plant appear
hand or palm shaped,
which led to its scientific name, Palmaria palmata, meaning “of the palm”. Dulse
grows near or below
the low tide level in somewhat protected bays with strong tidal currents. Dulse
is a perennial sea vegetable that contains numerous vitamins, minerals and trace
