Mayocoba Beans

Mayocoba Beans
(Mayocoba Beans) Mayocoba beans develop a creamy texture when cooked. For us, this makes them ideal for soups and other recipes. They also absorb the flavor of the recipe. Mayocoba beans are also labeled as Peruano, Canary, and even Mexican Yellow Beans. We are not sure why one name is prefered over another, so we have listed them separately. We enjoy the creamy texture in soups, which we like making in our pressure cooker and letting it soak warm for another hour or so, which really developes the creaminess of the beans. We could not find any specific detailed information for these beans. The label does indicate that they are very low in fat, and that a 1/4 cup (35g.) of dry beans has 23 g. carbohydrate, of which 9 g. is fiber, and 7 g. protein.

Vegan FlagThe above recipe is in keeping with God's creation intent (Genesis 1:29-31): 'Then God said, "I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food. And to all the beasts of the earth and all the birds of the air and all the creatures that move on the ground-- everything that has the breath of life in it-- I give every green plant for food." And it was so. God saw all that he had made, and it was very good.' (NIV) Let no animal suffer or die that we may live!
