Nutmeg, ground


(Nutmeg, ground) Nutmeg is the seed or kernel of a tropical fruit growing on evergreen trees (Myristica fragrans, of the family Myristicaceae, the nutmeg family) in the East Indies, India, Sri Lanka, West Indies, and Brazil. The flowers of these 60-foot tall trees are pale yellow and droop in clusters. When the fruit is ripe, it looks like a golden-yellow pear hanging among shiny, gray-green leaves that are long and pointed. As the fruit continues to ripen, the fleshy part becomes hard until it finally splits open at the top, revealing the yellow to red aril, the dried external fibrous covering or membrane of the seed. This covering is called mace. Under the aril is a dark, shiny nut-like pit. The nutmeg is the oval shaped seed inside this pit. Nutmeg is aromatic with a flavor that is warm, nutty, and slightly sweet. We use ground nutmeg (see photo) as an ingredient in some of our recipes. See nutritional chart below.
