(Peppers, Sugar Rush Peach) The sugar rush peach pepper comes from the Capsicum
baccatum species of peppers. This species has origins in either Peru or Bolivia.
Commonly referred to as aji peppers, they are now cultivated across South
America and in Costa Rica, as well as in other parts of the world. We bought
ours at Touch of Dutch Farm in Richland Center, Wisconsin. The long,
peach-colored fruit is packed with loads of super sweet, tropical flavor, and
the seeds bring a smoky, complex heat that when used together, creates a wild
flavor experience. Decently hot, more than a jalapeno but less than a habanero.
Most of the heat of this pepper resides in the interior ribs. We could not find
comprehensive nutritional for these peppers other than they contain vitamins A
and C, as well as copper and potassium.
