Ripe Plantain
When plantains are allowed to ripen fully until their skin becomes almost completely black, as in the photo to the left, most of their starch turns to sugar. Then they can be peeled with a knife and eaten raw, as is, cut into fruit salads, or even made into a non-dairy, whole fruit "ice cream." See our plantain recipes. To peel a ripe plantain, we suggest first cutting off the two ends. Then slit the skin from end to end, being careful not to cut too deeply into the plantain flesh (inner fruit). Then beginning at one end, start peeling the skin away from the inner fruit, working down along the slit. Finally, peel the skin away from the inner fruit, as shown in the photo to the right. On the metal baking pan (photo-left) are sliced frozen plantain pieces. These frozen slices can be stored in tightly sealed freezer bags or containers until you are ready to use them in a mixed fruit recipe or in making a frozen plantain cream dessert. They will be yours for food.
