Chinese Vegetable with Water Chestnuts Soup
4 lbs. Bok Choy 3 lbs. Spinach, chopped fresh or frozen 2 lbs. Onions 1 lb. Carrots 1 lb. Corn, kernels, frozen 1 lb. Peas, frozen 1 lb. Water Chestnuts, sliced 4-5 Celery, ribs 6 Dates, pitted 1/2 cup Peanuts, dry roasted OR 1/4 cup Peanut Butter 1/4 cup Soy Sauce OR Bragg Aminos 1/4 cup Corn Starch 2 tbsp. Ginger, ground 2 tbsp. Sesame Seeds 3-4 drops Smoke Flavor Cayenne Pepper OR Hot Sauce, to taste (To enlarge the photo of the Chinese vegetable with water chestnut soup, click on the photo or link) |
This recipe will make a large pot of soup, which is great for people who don't want to cook every day (as it is great for leftovers), and for feeding a large family or crowd. If you want to make a smaller amount, cut the recipe in half.
Place a large soup pot on the the stove top with 2-3 quarts of water and the frozen vegetables, and heat to a simmering boil.
While the soup pot contents are heating, wash and clean the fresh vegetables and peel the carrots and onions.
Using a food processor or knife, shred or chop the fresh vegetables and add to the soup pot. Mix well and make sure that all the ingredients are just covered with water. When the ingredients once again come to a simmering boil, add the water chestnuts, and continue cooking until the vegetables are tender to your taste.
In the container of a high speed blender, place 1 cup of water, the dates, peanuts or peanut butter, soy sauce or Bragg Aminos, ginger, sesame seeds, smoke flavor, and hot pepper. Cover the container and run the blender at high speed until the contents are creamy smooth.
When the vegetables are tender, add the blender contents to the soup with constant stirring, turn off the heat, cover the pot, and let the flavors blend together for about 5 minutes. (mix again before serving)
Serve and enjoy! It makes a great meal with a tossed salad. The cooled leftovers can be stored in the refrigerator in the covered pot or other covered container.
