Whole Wheat, Corn, and Oat Flat Bread 3 cups Pinto Beans, cooked or canned 1 Onion, medium size 1 - 6-oz. can Tomato Paste 1 - 6-oz. can Olives, ripe 1 Jalapeno Pepper OR Hot Sauce (to taste) 1 tsp. Garlic, crushed (optional) 2 tbsp. Lemon Juice 1/2 cup Nutritional Yeast, flakes 2 tsp. Chili Powder 2 tsp. Cumin, ground 2 tsp. Basil, dried 2 tsp. This is a quick and easy, as well as inexpensive, recipe that can be made in the microwave oven at home or work in few minutes from pre-prepared beans and fresh or frozen flat bread. For this recipe we used Whole Wheat, Corn, and Oat Flat Bread, but you can use any other flat bread.
Place the pre-cooked or drained canned pinto beans in a bowl suitable for using a potato masher.
Wash, peel, and finely dice the onion, and add to the beans.
Peel and crush the garlic, and add to the beans.
If using a jalapeno pepper, wash, remove the stem, and finely dice or chop, and add to the bowl, or add some hot sauce.
Add the other ingredients, except the olives, and mash with a potato masher until 1/2 to 3/4 of the pinto beans have been crushed, and mix thoroughly.
Open and drain the can of olives. If sliced, add to the bowl; if not, slice them crosswise into little rings before adding, and mix in thoroughly.
Place a flat bread on a microwaveable plate and spoon on the southwestern style bean topping to the thickness you desire.
Place in the microwave oven on high until hot (about 2 minutes), being careful not to over cook, which can cause the edges of the flat bread to get hard. Experiment with the time on the first one, and all the others will be perfect.
Remove from the microwave, cut into pieces as desired, and enjoy.
