Portabella Mushroom Steaks (Reubenesque)
Ingredients
6 Portabella Mushrooms, caps
1 lb. Sauerkraut
1 - 15-oz. can White Beans
3/4 cup Nutritional Yeast
1/2 cup Lemon Juice
2 tbsp. Corn Starch
1 Chipotle Pepper (optional), stem removed

Preparation
This recipe can be prepared in either a microwave or conventional oven. If cooking in a microwave oven, cook on "high". If cooking in a conventional oven, bake at 350 degrees F.
Wash and remove the stems from 6 portabella mushrooms (use the stems in another recipe, or split them and cook with the caps). Place the caps (top down) in a glass baking pan.
Using a table fork, place the sauerkraut uniformly on each mushroom so that they are completely covered.
Place the other ingredients in a high speed blender, cover, and run on "high" until all the ingredients are creamy smooth. When finished, spoon on top of the sauerkraut.
Place the baking pan in the oven and cook until the mushrooms are tender.
Serve as a main dish or in a sandwich. Enjoy!
