Banana Raisin Spice Muffin Cake
Ingredients
1-1/2 cups Whole Wheat or Spelt Flour
1/2 cup Rolled Oats, ground
4 Bananas
1-1/2 cups Raisins
2 tbsp. Corn Starch
1 tsp. Baking Soda
1 tsp. Allspice, ground
1 tsp. Cinnamon, ground
1/4 tsp. Cloves, ground
1/4 tsp. Nutmeg, ground
Apple Juice, as required

Preparation
We baked this banana raisin spice muffin cake in our microwave oven in only 8 minutes at 1000 watts, but the muffin cake can also be baked in a conventional oven preheated to 350 degrees F. in 20-25 minutes.
We also grind our own grain into flour in our Vita-Mix. If you are doing the same thing, you can grind the whole wheat or spelt with the rolled oats. If not, the rolled oats can be pre-ground in a blender.
Place the flour and ground oats in a mixing bowl. Add the cornstarch, baking soda, allspice, cinnamon, cloves, and nutmeg, and thoroughly mix all the ingredients together. Add 1 cup of the raisins and mix well to insure that there are no clumps of raisins and that each raisin is coated with the flour mixture.
Peel the bananas and place them in the container of your blender. Add the remaining 1/2 cup of raisins, cover, and run the blender at high speed until the mixture is creamy smooth.
Pour the liquid ingredients in to the mixing bowl and thorough mix everything together. If the mixture is stiff, add a little apple juice and mix again until the batter nearly self levels but is not runny.
Pour the batter into a lightly oiled 9 inch covered glass baking dish, and smooth to the edges, cover, and place in the microwave oven on "high" for 8 minutes at 1000 watts. (adjust the time to the power setting, if different).
When the muffin cake is baked, remove from the oven and set on a wire rack to cool with the lid on. Keeping the lid on the baking dish prevents the muffin cake from drying out and allows any soft areas to become firm.
